The Japanese Colombian community doesn't buy their soy sauce off a store shelf (although that's slowly changing as Colombian appetites grow). For over 50 years they have gone to Doña Irma Teshima who has brewed soy sauce and tofu from scratch. When my aunt came to visit California she said, "You know what? You can buy tofu anywhere here but it doesn't have any flavor!"
